The paper presents the results of organic residues analyses carried out on the floor sediments of three different buildings in the Messapian farm of Acquarica Pozzo Seccato (Lecce), aimed at identifying the anthropogenic chemical activity residues on archaeological surfaces and validating the hypotheses about the function of the buildings. The integration between archaeological data and spatial distribution of the organic residues showed different functions for the archaeological structures investigated, closely related to agricultural activities and animal breeding.
