Since its start Degree-Day options have always been the most common weather derivative type, mainly used in energy business. In this article, on the basis of previous research, we will use and adapt this type of contract in order to protect viticulture production of Apulia region. In doing this, we have to take special account of the critical weather variable for wine industry: the key point is to find the relationships between the temperature and the production of grapes and wine. After identifying the impact of the weather variable on profits, research focus on designing a strangle as temperature risk hedging strategy suitable for the case study of Negroamaro. The final aim is to understand if this type of weather risk management product could be useful in viticulture and which is the reason why it has not been yet used.
